My Green Ladies’ Salsa is bright, spicy, and simple!

I have been lucky enough to zip off to Isla Mujeres (a small island off of Cancun) a few times this year thanks to my friend Rosie who rents us her family house for a steal. The island is beautiful and relaxed and I have the best time when I am there.  This time I ventured to the local market on a mission to impress my fellow travelers with my dynamite guacamole (which I have featured on the blog before). However, the avocados were not ripe and our urge to snack could not wait. So I did what I do best and rolled with it.  I grabbed an assortment of veggies and whipped up this spicy green salsa. It was a hit! I am calling it Verde Mujeres (Green Ladies). I served it with some fresh made tortilla chips from the market and a cold cerveza to chill the heat.  It gets better overnight in the fridge and we threw it on some eggs.  Muy rico!

Here is how I made it.

INGREDIENTS

1 medium white onion chopped

1 jalapeño seeds and ribs removed and diced

2 scallions chopped

2-3 medium sized tomatillo tomatoes chopped

Juice of two limes

Bunch of cilantro

2 tablespoons of canned green chilis

1 tablespoon of salt

Few twists of ground pepper

DIRECTIONS

None of these ingredients are exact. This is recipe is definitely on island time.  Simply give everything a rough chop and toss it into a blender or food processor. Pulse until it looks like salsa. 

Serve with some crispy tortilla chips or use as a marinade and topping for a grilled steak. Throw it on eggs in the morning.  Or all of the above!
